⅔ cup sugar

2 tablespoons pink curing salt

4 cloves peeled garlic

2 teaspoons coriander seeds

10 allspice berries

2 teaspoons yellow mustard seeds

1 cinnamon stick

1 carrot

1 onion

3 bay leaves

2kg beef brisket
-
2 slices sourdough bread
-
30g sauerkraut
-
2 tablespoons Thousand Island dressing

2 slices swiss cheese (optional)
Directions
Prepare the corned beef by making the brine/curing solution: Combine all the curing ingredients except the brisket in a pot and bring to a boil; adjust the heat and simmer, stirring until the sugar is dissolved. Transfer the curing liquid to the fridge and let it sit until chilled. Then add the brisket to the pot, weighing it down with a plate or other heavy object so that the meat remains fully submerged. Refrigerate, covered, for 5 days.
Rinse brined brisket, place into the SmartLid™ base pot, cover with water until meat is fully submerged. Move the slider to PRESSURE mode and PRESSURE COOK on Hi for 90 minutes. Release the pressure by turning the valve to VENT.
After resting, thinly slice the corned beef against the grain.
Spread Thousand Island dressing on sourdough, layer with corned beef, sauerkraut, and Swiss cheese (optional). Top with another slice of bread.
Optional Grilling: Move the slider to AIR FRY/HOB mode, select GRILL function and grill with butter for 2 minutes until bread is toasted, and cheese (if used) is melted.
