Ingredients
Air-Fried Ayam Penyet with Sambal, Rice & Sides
For the chicken:
- 4 whole chicken legs
- 2 inches fresh turmeric
- 7 cloves garlic
- 1 tablespoon coriander seeds
- 1 ½ cups water
- 2 ½ teaspoons salt
- Cooking oil
For the sambal:
- 7 shallots (peeled)
- 12 red chillies (cut into 2-inch pieces)
- 20 red bird's eye chillies
- 2 tomatoes
- 2 inches shrimp paste (roasted)

- 5 calamansi (juiced)
- Raw cabbage cucumber
- Air-fried tempe
- Air-fried tofu
- Air-fried brinjal mixed with sambal
To serve:
- Steamed white rice
- Indonesian sweet soy sauce
- Calamansi
- 4 sprigs of fresh coriander (chopped)

Directions
- Begin by rinsing your rice and placing it in a heat-safe bowl using a 1:1.5 ratio of rice to water. Cover the bowl tightly with aluminum foil and set it aside.
- Blend the turmeric, garlic, and coriander seeds into a smooth paste. In a pot, combine the paste with water and salt. Add the chicken legs and poached for 10-15 minutes. Once done, remove the chicken and set aside.
- To make the sambal, toss the shallots, red chillies, bird's eye chillies, tomatoes, and shrimp paste with a bit of oil.
- Lightly oil the tofu, tempe, and sliced brinjal and arrange them on a tray, ready to air-fry.
- Now assemble everything in the Ninja DoubleStack
- XL Air Fryer according to basket levels and temperatures.
- Place the brinjal, tofu, and tempe in the Upper Basket, upper level, and the sambal ingredients in the Upper Basket, lower level. Set this basket to cook at 200°C for 5 minutes.
- Place the foil-covered bowl of rice in the Lower Basket, lower level, and arrange the poached chicken legs in the Lower Basket, upper level, drizzle oil over them. Insert the Digital Cooking Probe, press the DoubleStack Pro button, select CHICKEN. Set the rice to cook at 195°C for 25 minutes and the chicken at 190°C for 20 minutes.
- Press the SYNC button before starting to ensure all components finish cooking at the same time, then start the air fryer.
- Once cooking is complete, pound or blend the sambal ingredients into a rough paste then stir in sugar, calamansi juice.
- To serve, plate the fluffy white rice alongside the crispy air-fried chicken with sambal, air-fried tempe and tofu, brinjal mixed with sambal, cucumber slices, and a drizzle of Indonesian sweet soy sauce. Finish with a sprinkling of chopped coriander and calamansi halves on the side.
